Crispy fried cheese sticks — strips of mozzarella wrapped in a simple homemade dough and fried until golden, with gloriously melty centres.
- 1 cup Flour
- 1/2 cup Milk
- Knob Butter
- 1 Egg
- 1 kg Mozzarella
- 1 tsp Sugar
- 1 tsp Salt
- 1 tsp Olive Oil
- For frying Oil

Preparation
- Cut the cheese into long strips and chill in the fridge so it stays firm.
- Mix the flour, butter and egg in a bowl, season with the sugar, salt and olive oil, then gradually add the milk and knead well to a smooth, workable dough.
- Roll out the dough and cut into long strips 2–3cm wide. Roll each strip around a cheese strip in a spiral, making sure the dough fully covers the cheese so it doesn't melt out while frying.
- Roll the cheese sticks through flour to stop them sticking, then heat oil in a frying pan until hot and fry until golden.
