Naleśniki — thin, tender Polish pancakes made from a simple smooth batter, cooked golden and rolled around a sweet or savoury filling of your choice. Versatile and comforting.

Ingredients

  • 1 cup Flour
  • 2 Eggs
  • 1 cup Milk
  • 3/4 cup Water
  • Pinch Salt
  • 1 tsp Sugar
  • 3 tbs Butter

Preparation

  1. Add the flour, eggs, milk, water and salt to a large bowl and mix with a hand mixer until you have a smooth, lump-free batter.
  2. Mix in the butter or oil now, or alternatively use them to grease the pan before frying each pancake.
  3. Heat a non-stick pan over medium heat, then pour in the batter, swirling the pan to help it spread.
  4. When the pancake starts pulling away from the sides and the top is no longer wet, flip it and cook briefly on the other side.
  5. Transfer to a plate and cook the remaining batter until all used up.
  6. Serve warm, with the filling of your choice.
