Presh me oriz — a comforting Albanian bake of leeks and lamb mince cooked with rice in lamb stock, baked until the rice is soft and the liquid absorbed. Simple, savoury and warming.

  • 500g Leek
  • 400g Lamb Mince
  • 1 Diced Onion
  • 200g Rice
  • 1 L Lamb Stock
  • Pinch Salt
  • Pinch Pepper
  • Splash Olive Oil

Preparation

  1. Fry the leeks in a small dash of olive oil for a few minutes until they start to brown.
  2. Add the onion and mince and fry until everything is browned, stirring continuously to stop the leeks catching and burning.
  3. Add the rice and stir together for a few minutes, ensuring it is well blended and coated in the juices.
  4. Add the lamb stock, salt and pepper, stir well, and bring to the boil, then leave to boil for 2 minutes.
  5. Pour the mixture into a large baking tray and place on the bottom shelf of a preheated oven at 180°C. Bake for up to 1 hour, until all the liquid has evaporated and the rice is soft.
  6. Once cooked, turn off the oven and, keeping the door open, leave the bake to cool for 10 minutes before serving.
