Ramen noodles with a jammy soy-marinated boiled egg — a quick, comforting bowl topped with a halved egg whose golden yolk flows into the savoury broth. Simple soul food.

Ingredients

  • 1 Packet Noodles
  • 2 cups Water
  • 1 large Egg
  • 1 tbsp Soy Sauce
  • 1/2 tsp Chilli Sauce
  • 1 tbls Spring Onions
  • 1/2 tsp Salt
  • 1/2 tbs Pepper

Preparation

  1. Bring the water to the boil, gently add the eggs, and cook for exactly 6½ to 7 minutes.
  2. Immediately transfer the eggs to a bowl of ice water for 3–5 minutes to stop the cooking.
  3. Optionally but recommended, peel the eggs and marinate in a mix of 2 tbsp soy sauce, 2 tbsp mirin, 1 tsp sugar and 4 tbsp water for at least 4 hours, or overnight.
  4. Slice in half, letting the yolk flow into the broth, and serve over the noodles.
