Rogaliki — tender Polish croissant-shaped cookies made with a cream cheese dough, rolled around a spoonful of jam and dusted with powdered sugar. Delicate and moreish.

Preparation
- In a medium bowl, mix the egg yolks, cream cheese and baking powder with a hand mixer. Carefully start adding the flour. When the mixture stops mixing well and looks like wood chips, put away the mixer and knead the dough by hand.
- Shape into a roll, cover in foil, and freeze for 15 minutes. Meanwhile, preheat the oven to 375°F.
- Take the dough out and divide in two. Roll out and cut into 3-inch triangles.
- Put a small spoonful of jam at the centre of each triangle and roll them into a croissant shape.
- Place the croissants onto a greased cookie sheet and bake for 10–12 minutes, or until golden.
- Repeat with the rest of the dough.
- Once out of the oven, set aside and sprinkle with powdered sugar. This makes about 60 cookies (three batches of 20).
