Rogaliki — tender Polish croissant-shaped cookies made with a cream cheese dough, rolled around a spoonful of jam and dusted with powdered sugar. Delicate and moreish.

  • 1 cup Butter
  • 3 Egg Yolks
  • 8 oz Cream Cheese
  • 1 tsp Baking Powder
  • 3 cups Flour
  • 1 Jar Jam

Preparation

  1. In a medium bowl, mix the egg yolks, cream cheese and baking powder with a hand mixer. Carefully start adding the flour. When the mixture stops mixing well and looks like wood chips, put away the mixer and knead the dough by hand.
  2. Shape into a roll, cover in foil, and freeze for 15 minutes. Meanwhile, preheat the oven to 375°F.
  3. Take the dough out and divide in two. Roll out and cut into 3-inch triangles.
  4. Put a small spoonful of jam at the centre of each triangle and roll them into a croissant shape.
  5. Place the croissants onto a greased cookie sheet and bake for 10–12 minutes, or until golden.
  6. Repeat with the rest of the dough.
  7. Once out of the oven, set aside and sprinkle with powdered sugar. This makes about 60 cookies (three batches of 20).
