Tavë me presh — a comforting meatless Albanian leek and rice bake with roasted red peppers and herbs, baked until tender. Simple, hearty and full of warming flavour.

Ingredients

  • 500g Leek
  • 3 diced Red Pepper
  • 200g Rice
  • 1 clove finely chopped Garlic
  • 1 L Vegetable Stock
  • 1 tsp Paprika
  • 1 tsp Oregano
  • 1 tsp Parsley
  • 1 tsp Basil
  • Pinch Salt
  • Pinch Pepper
  • Splash Olive Oil

Preparation

  1. Fry the leeks in a small dash of olive oil for a few minutes until they start to brown.
  2. Add the roasted red peppers, garlic, stock, herbs, salt, pepper and paprika. Give it a good stir, add the rice, and stir again.
  3. Leave it to come to the boil, then simmer for 2 minutes.
  4. Pour the mixture into a baking tray with a depth of 2 inches or more, mix thoroughly, and level out evenly.
  5. Place on the bottom shelf of a preheated oven at 180°C and bake for 1 hour.
  6. Once cooked, turn off the oven and, keeping the door open, leave the leek bake to cool for 10 minutes before serving.
