Thai drumsticks — chicken drumsticks coated in a sticky sweet chilli, orange and red curry marinade, then roasted until tender. Easy, flavourful food, lovely hot or packed for later.

Ingredients

  • 2 tablespoons Sweet Chilli Sauce
  • 2 tblsp Orange
  • 1 clove peeled crushed Garlic
  • 1 tblsp Thai Red Curry Paste
  • 8 Chicken Drumsticks

Preparation

  1. Heat the oven to 200C/180C fan/gas 6 and line a baking tray with foil. Mix the sweet chilli sauce with the orange zest and juice, garlic, curry paste and ¼ tsp salt. Add the chicken and coat really well.
  2. Arrange the drumsticks on the foil, spaced apart, and coat with any marinade left in the bowl. Roast for 35–40 minutes until tender, then serve, or wrap in foil or pack into a container.
