Torta de fiambre — a savoury Uruguayan ham and cheese cake with a soft, custardy batter baked until golden. Simple, comforting and lovely served hot or cold with fresh herbs.

  • 150g Cheddar Cheese
  • 200g Ham
  • 3 Egg
  • 100g Vegetable Oil
  • 240g Milk
  • 120g All Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Salt
  • To taste Dried Oregano

Preparation

  1. Line the bottom of a 20–22cm (8–9 inch) springform with parchment paper, leaving some overhang as the batter is very liquid and may spill. Preheat the oven to 220°C.
  2. Grate the cheese and take out the ham.
  3. Mix all the remaining ingredients in a large bowl for about one to two minutes.
  4. Pour half the batter into the prepared pan — it will be very liquid. Place the ham and cheese on top, then pour the remaining batter over.
  5. Bake for about 20–25 minutes, or until the top is golden. Wait a few minutes before releasing from the pan, and enjoy hot or cold with some fresh herbs.
