Mutabbaq — crisp Saudi filo parcels stuffed with spiced minced meat, tomato, egg and spring onion, fried or baked golden. A savoury, fragrant street-food favourite.
- 500g Mincemeat
- 1.5 tbs minced Garlic
- 1.5 tbs minced Ginger
- 1 Egg
- 1 large Tomato
- 4 Spring Onions
- 12 Filo Pastry
- 1 1/2 cups Melted Butter
- 1 tsp Salt
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Allspice
- 1 tsp Turmeric
- 1 tsp Black Pepper
- 1 tsp Sugar

Preparation
- Heat a frying pan and add some oil. Fry the mashed garlic and ginger first, then add the minced meat and all the seasoning. When the meat is cooked, set aside to cool.
- In another large bowl, combine the egg, chopped tomato, chopped spring onion and the minced meat.
- Take 2 sheets of filo pastry (or 1 spring roll wrap), brush with butter, and put some filling in the middle. Fold the pastry and brush more butter on the sealed part.
- Heat a frying pan with a little oil and cook the parcel until both sides and all four edges turn golden brown. Alternatively, brush the parcel all over with melted butter and bake at 180°C for 10–15 minutes.
