Paracuca — sweet, crunchy roasted peanuts coated in a light sugar glaze and baked until golden. A simple, addictive Angolan-style snack that keeps well in a jar.

Ingredients

  • 5 Cups Unsalted Peanuts
  • 1 cup Sugar
  • 1 cup Water
  • 1/4 tsp Salt

Preparation

  1. In a large heavy saucepan, combine the peanuts, sugar and water. Bring to the boil and cook until the syrup has evaporated, about 10 minutes.
  2. Spread the peanuts in a single layer in a greased 15x10x1-inch baking pan and sprinkle with the salt.
  3. Bake at 300°F for 30–35 minutes, or until dry and lightly browned. Cool completely, then store in an airtight container.
