Migas — a rustic Spanish dish of crumbled bread fried slowly with garlic until soft and golden. Humble, comforting peasant food, lovely with a fried egg or chorizo.

Preparation
- Crumble the bread into small pieces, sprinkle with cold water, cover with a damp cloth, and leave for 30 minutes.
- Heat 2 tsp olive oil in a deep pan. Add the garlic cloves, skins on, with a small cut in each to open them, and fry for 5 minutes, then set the garlic aside.
- In the same oil, fry the bread, stirring constantly, for 15 minutes, with a grinding of black pepper.
- Add the garlic back and continue stirring for about 20 minutes — it's ready when the bread is soft and golden.
